I thought I saw somewhere how you can have one product be ordered once, ie have the order button pressed once. Then they cannot choose from that product again unless they remove that item.
Is that possible?

At this time, there's not a standard feature/option in uShop that would prevent someone from adding more than one of the same item to the shopping cart. You may, however, be able to do something with JavaScript. That is, perhaps you could utilize uShop's JavaScript interface to handle adding items to the shopping cart (See the JavaScript Examples in the uShop Applet Reference) ... and also have the JavaScript set a flag and/or disable that input element to prevent the customer from being able to "Add" that item again.
