Is it possible to flick a switch or design the catalog in such a way that US currency and Canadian Currency could be calculated and accepted seperately?

I'm not exactly sure when you want customers to be able to select between US or Canadian currency... but here are a couple ideas:

1) You could just setup separate HTML pages for each language/currency that you would like to support. Of course the two separate stores would have to have prices corresponding to their currency.

Or

2) You could try using the EURO option to show total in both US and Canadian currencies. See the reference page for the uShopInitialize applet for information about configuring the label/conversion rate of the EURO option.
